- 4 Northern Fisheries frozen cod loins, thawed
- 8 slices of bacon
- 1 lemon, zest and juice
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Toothpicks or kitchen twine
- Oil, for frying (vegetable, canola, or sunflower oil)
- Fresh parsley, chopped (for garnish)

Begin by preparing the cod loins. Pat them dry with paper towels to remove excess moisture.

In a bowl, combine the olive oil, lemon zest, lemon juice, dried thyme, and garlic powder to create a marinade. Brush both sides of each cod loin with the marinade. Season with salt and pepper.

Take two slices of bacon for each loin. Lay them on a cutting board, slightly overlapping.

Place a cod loin at one end of the bacon slices.

Roll the bacon around the cod loin, securing it with toothpicks or tying with kitchen twine. Repeat this for each fillet.

Heat oil for frying in a large skillet over medium-high heat. The oil should be about 1/2 inch deep in the pan.

Carefully place the bacon-wrapped cod loins into the hot oil, seam side down. Fry for about 3-4 minutes on each side, or until the bacon is crispy and golden brown, and the cod flakes easily with a fork.

Once cooked, use a slotted spatula to transfer the fried cod loins to a plate lined with paper towels to absorb excess oil.

Remove the toothpicks or twine and transfer the fillets to serving plates.
