Grilled Lemon Herb Cod Fish

Ingredients:

  • 4 cod fish loins
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh herbs (such as parsley or basil) for garnish

Instructions:

Please note all seafood should be cooked to a minimal internal temperature of 145°F

  1. Preheat your grill to medium heat.

  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried thyme, dried oregano, salt, and pepper to create the marinade.

  3. Place the cod loins in a shallow dish and pour the marinade over them. Ensure that each loin is evenly coated. Let them marinate for about 15-20 minutes, allowing the flavors to penetrate the fish.

  4. While the fish is marinating, lightly oil the grill grates to prevent sticking.

  5. Carefully place the cod loins on the preheated grill. Close the lid and grill for approximately 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork. Be cautious not to overcook the fish, as it can become dry.

  6. Once the fish is cooked, remove it from the grill and transfer it to a serving platter.

  7. Garnish with fresh herbs and serve the grilled cod fish with lemon wedges on the side for an extra burst of citrus flavor.
